Homemade Jalapenos Poppers for a Mexican Lunch#Mexican#Jalapenos#Intenseflavor#sharingwithfriends
Years ago a good friend's cousin made the most amazing jalapeno poppers I ever tasted. Although they made my mouth tingle with heat, the flavor dazzled my taste buds. I have been searching for that flavor even since. As a result, I decided, since I had left over jalapeno peppers from making pica de gallo, I decided to see if I could replicate her poppers. Unfortunately, I never asked her for the recipe. However, with memory from my taste buds and Google, I gave it my best shot.
After slicing the peppers in half and cleaning out the seeds, I mixed together cream cheese, cheddar cheese, garlic, chives, bacon , and chorizo to make a filling. While the oven was preheated, I filled the pepper halves and place them in a baking dish. I baked my creation until the pepper were soft but still had texture. They looked and smelled heavenly.

Still, I had to taste them. Would they capture the memory of a flavor I treasured so many years ago? They tasted delicious. I really did a great job for my first time. However...they did NOT hold the essence of the flavor that I tasted so many years ago. Something was missing. I have no idea what. Regardless, I package my peppers for lunch the next day.
I was surprised at lunch the next day. As I shared my lunch with my friends at work, the flavor had intensified. I had to pat my self on the back. They were awesome. In fact, they were better than the flavor I remembered all those years ago. I am not sure why it tasted so good the next day. However, I would like to believe that food always tasted better when your happy and sharing with people your care about. That is really what I remember about my first taste of the jalapeno popper my friend's cousin made. We laughed, joked, and tasted the flavors. It was a good time just like I experienced with my friends at work. I guess food does taste better with friends!
