Bacon, Lettuce, and Tomato Sandwich on Gluten Free Bread
I am working hard to develop a Paleo lifestyle. To date, I have not been successful. I am definitely a work in progress. But, I tried to prepare a lunch that is tasty and filling. How bad can a BLT be with gluten free bread and nitrate free bacon be for a lunch time meal.

I could not wait for lunch the next day. It looked and smelled delicious!
Flash forward the next day at lunch. I took off the bacon to crisp it up for a better sandwich. I added extra mayo and the crisp bacon to the sandwich. I took my creation to my desk to throw down. I was watering at the mouth. BLT is one of my favorite sandwiches.
I bit in and noticed the crispy bacon, juicy tomato, and fresh lettuce. The bread,.....the vehicle that carry it all, was just a little lacking. Gluten free is healthy and good. However, it did NOTHING for my BLT. Although the bread was multi-grain, it lacked that 'something' to make me happy and satisfied. I felt like I was eating L and T on a sawdust brick. It just did not work for me.
Perhaps, it was the wrong type of gluten free bread or my lack of educating my taste buds that made the sandwich less than exceptional. Maybe I need to try making my own gluten free bread, Regardless, it was not a good lunch. Bread is an intricate part of a BLT. And, the bread I had did not cut it. I will try it again with another gluten free bread. I just think this journey is going to be a struggle until my mind and taste bus learn to adapt to something very different.
